- 4 Calabacines Luna (redondos)
- 1 Cebolla
- 2 Cucharadas Aceite Oliva
- 100 grs Champiñones
- 4 Cucharadas / 60 gr Queso crema o 1/2 yogur de Soja
- 1/2 Cucharadita Nuez Moscada
- 1/2 Cucharadita Pimienta Negra
- 1/2 Cucharadita Menta picada
- 1 Cucharada Hierbas Provenzales
- Sal
- Queso Rallado
Instructions to make to make Calabacines Luna Rellenos de Champiñones
- Lo primero será lavar y cortar la parte superior de los Calabacines. Los pincharemos con un punzón varias veces y les daremos un calentón en el Microondas a temperatura máxima (800-900 watt) durante 7 minutos. Dejamos enfriar.

- Con la ayuda de una cuchara, vaciamos la Pulpa de los Calabacines, la picamos y le quitamos el exceso de agua. Reservamos.

- Pelamos y cortamos la Cebolla muy menudita. La sofreímos en una sartén con el Aceite de Oliva hasta que esté doradita.

- Lavamos y picamos los Champiñones. Los echamos junto con la Pulpa de los Calabacines a la sartén donde tenemos la Cebolla pochada. Mezclamos y cocinamos a fuego fuerte durante 5 minutos.

- Bajamos a fuego medio y añadimos al relleno el Queso crema, Pimienta, Nuez moscada, Menta, Hierbas provenzales y Sal. Mezclamos todo y cocinamos durante 5 minutos más. Reservamos mientras se enfría.

- Precalentamos el Horno a 180ºC con calor arriba, abajo y Turbo.
- Salpimentamos los Calabacines, los vamos rellenando con la mezcla de Champiñones, les ponemos las tapas, los colocamos en una fuente apta para horno previamente engrasada y los tapamos con papel de aluminio. Horneamos durante 20 minutos.

- Una vez pasado el tiempo, sacamos la bandeja, cambiamos el horno a modo Grill, quitamos las tapas de los calabacines y echamos Queso Rallado al gusto. Gratinamos durante 10 minutos o hasta que esté el Queso doradito... ¡¡Y listo!!!!

- Ya veréis como os sorprenderá el sabor del relleno, que tiene un aroma y paladar fresco, delicado, suave, le da un toque de diversión al Calabacín pero no neutraliza el sabor de la Hortaliza. Si la dejáis reposar unas horas o para el día siguiente, aumentan los sabores y aromas….
